Solid Wood Board Care & Maintenance

Handwash Only

Wash your board with soap and water after use. After washing the cutting board, dry immediately with a towel and let it air dry standing up or on a raised rack with air flow.

DO NOT:

1. Submerge in water. The wood will absorb water and potentially warp.

2. Place in the dishwasher. The heat and water will potentially warp and splinter the board.

3. Leave a wet board flat to dry. If the board dries on one side, it will potentially warp.

4. Use bleach on your board. This will stain and/or excessively dry out the wood of the board.

Additional Cleaning Options

  • White Vinegar: acetic acid (a.k.a. white vinegar) is a great disinfectant that can destroy some bacteria and viruses. It also acts as a deodorizer and cuts grease. Lightly spray vinegar on the board, let sit for a few minutes, and wipe dry with a damp cloth.

  • Baking Soda & Salt: to remove stains and deodorize, mix 2 tablespoons of baking soda, 1 tablespoon of salt, and 3 tablespoons of hot water to form a paste. Scrub the entire surface of the board, wipe it down with a wet cloth, and towel dry.

  • Lemon and Salt: for a lemony fresh clean, dampen your board slightly and sprinkle coarse ground salt over it. Slice a lemon in half, and rub the cut side of the lemon over the board while slightly squeezing the lemon juice out. Let sit for about five minutes before rinsing off the salt and towel dry.

Maintenance

Similar to cast iron and other cookware, a wood cutting board looks and works its best, and lasts longer, when it's well cared for on a regular basis. Prior to delivery, we condition every board with mineral oil and board butter.

Mineral Oil

Mineral oil is the most commonly used method, as it's easy to find and cost effective (a 16oz bottle costs about $2 at your local grocery store). Mineral oil penetrates the wood to saturate the wood fibers in order to stop any other liquids (juice, blood, fatty oils, etc.) from soaking into the board. Additionally, a well-oiled board is less likely to warp than a dry board when exposed to water.

Apply two or three thin strips of mineral oil across the board, and use a clean cloth to spread the oil evenly over the entire board. Let the oil set for up to 24 hours to allow time for the oil to soak into the grain of the wood. Wipe away excess oil with a dry cloth.

Note: avoid using vegetable or nut-based oils including coconut oil. While coconut oil has become increasingly popular, all of these oils are rich in saturated fats. When exposed to air, they will eventually go rancid creating not only a foul odor but also an unpleasant taste!

Board Butter

While mineral oil penetrates the wood, board butter acts as a physical barrier on the surface of the wood that protects against stains and liquids. The board butter also aids in sanitation as it fills and seals in knife scars and microscopic cracks. Used in conjunction, mineral oil and board butter will help keep your board sanitary, easier to clean, and avoid it from warping.

Using a dry cloth, rub the board butter onto your board until it's coated in a thin layer. Allow to set for 5-15 minutes, and then buff with in a circular motion until the finish is smooth.
